We hadn't had in a while, so I cooked some Mediterranean Roasted Fish:

2 large red onions, cut into 1/4" wedges
2 TBS extra virgin olive oil
1 package frozen artichoke hearts, thawed (I use canned/jarred)
1 cup cherry or grape tomatoes
2 TBS chopped parsley
1 tsp grated orange peel
1 tsp minced garlic
4 skinless flounder fillets (cod works well too, but requires longer cooking)

Roast onions in olive oil in baking dish in 400 degree oven for 35 minutes

Remove from oven, stir in artichokes and tomatoes, push to side, add fish, and spoon vegetables over fish

Sprinkle with combined parsley, orange peel, and garlic

Roast at 450 degrees, 5 minutes for thin fillets (flounder), 12-15 for thicker (cod)

Can be served over quinoa, couscous, or rice.

It is very good. We'd probably have it more often if not for the prep time. No picture - you'll have to make your own ;).
