      Orange Roughy in Scallion & Ginger sauce

Cooked this one up tonight for the first time in a while. We like it and Orange Roughy was on sale.

1/3 c dry sherry or vermouth
3 T soy sauce
2 t sesame oil
1/4 c finely chopped scallion
1 t grated ginger
1 t finely chopped garlic

Mix together first six ingredients and pour over

2 orange roughy fillets in baking dish. Bake 12 min in 400-degree oven.

Is good served over rice, couscous, or quinoa.

I had no idea what orange roughy was until I looked it up. Thanks for sharing!

The recipe also works well with other white fish like cod.
